Easy cauliflower 'rice'

Instructions:
  • Finely chop cauliflower florets in a food processor.
  • In a large, deep frying pan over medium heat, heat coconut oil. Add chili, ginger, and garlic, and cook for 2 minutes until the chili has softened and the mixture is fragrant. Stir in cauliflower and desiccated coconut, then cook for 20 minutes until the cauliflower is tender and lightly golden, stirring occasionally.
  • Add green onions and chives, if desired, and mix well. Season generously with salt and pepper. Before serving, sprinkle with additional green onions.
