Elevate your vegan twist on ceviche with cauliflower, carrots, and tomatoes. Enjoy on tostadas or with crackers.
Ingredients:
  • 1 large head cauliflower
  • 4 small carrots, peeled and finely chopped
  • 3 large plum tomatoes, seeded and chopped
  • 1 small white onion, finely chopped
  • 8 sprigs cilantro, chopped
  • 1.5 limes, juiced
  • salt to taste
  • 1 avocado - peeled, pitted, and sliced
Instructions:
  • Fill a saucepan with water below the steamer insert. Bring water to a boil, then steam cauliflower covered for 7 minutes. Cool and finely chop.
  • Combine cauliflower, carrots, tomatoes, onion, and cilantro in a bowl. Drizzle with lime juice, sprinkle with salt, and refrigerate for at least 30 minutes. Serve topped with avocado slices.
