Easy cheesy 2-minute noodles

Kid-friendly cheesy noodle dish.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 20g butter
  • 4 middle bacon rashers, trimmed, roughly chopped
  • 20.00 ml plain flour
  • 4 x 72g packets 2 Minute Noodles Chicken Flavour
  • 515.00 gm milk
  • 250.00 ml frozen peas
  • 250.00 ml grated colby cheese
  • 62.50 ml fresh flat-leaf parsley leaves, chopped
  • 1 tsp lemon zest
Instructions:
  • In a large, deep frying pan over medium-high heat, warm oil and butter until sizzling. Add onion and bacon, cook for 5 minutes, stirring occasionally until onion is soft. Set aside 2 tablespoons of the onion mixture in a small bowl, cover to keep warm.
  • In a pan, sprinkle in the flour and 2 chicken flavor sachets from noodles (discard the rest). Cook while stirring for 1 minute. Lower the heat to medium and slowly pour in the milk and 2 cups of water. Let it simmer, then add the noodles. Cook and gently stir for 2 minutes until noodles are tender.
  • Stir in peas and cheese until peas are vibrant green and tender. Mix in parsley and lemon zest with the onion mixture. Season with salt and pepper. Combine everything well.
  • Take the noodles off the heat and generously sprinkle them with the flavorful onion mixture before serving.
