Get creative with this quick pepperoni pizza using instant noodles as the base.
Ingredients:
  • 4 x 74g packets chicken-flavoured 2-minute noodles
  • 1 egg, lightly beaten
  • 36.40 gm extra virgin olive oil
  • 250.00 ml grated pizza cheese
  • 206.25 gm tomato pasta sauce
  • 50g sliced pepperoni salami
  • 120g baby rocket
  • 30.00 ml balsamic vinegar
  • 62.50 ml finely grated parmesan
Instructions:
  • Preheat oven to 220C/200C fan-forced. Boil noodles, including flavor sachets, for 1 minute until slightly softened. Drain and transfer to a medium bowl. Mix in the egg until combined.
  • Begin by heating oil in a 22cm (base) cast-iron or ovenproof frying pan over medium heat. Add the noodle mixture and press it down using a spatula to cover the base of the pan. Lower the heat to low and sprinkle half of the pizza cheese over the noodles. Spread the pasta sauce on top, then layer on the remaining pizza cheese and salami. Transfer the pan to the oven and bake the pizza for 15 minutes or until it turns golden. Let it stand for 5 minutes before serving.
  • Mix arugula, balsamic vinegar, and Parmesan cheese in a bowl. Season with salt and pepper. Cut the pizza into slices and serve promptly with the salad.
