Easy Chicken, Rice and Lentil Wraps

Spicy, cheesy chicken wraps bursting with flavor in just 20 minutes!
Ingredients:
  • 3/4 cup water
  • 1 cup instant white rice
  • 1 can (19 oz) Progresso™ Vegetable Classics lentil soup
  • 2 cups cubed cooked chicken
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 cup shredded Cheddar cheese (4 oz)
  • 2 plum (Roma) tomatoes, chopped (about 3/4 cup)
Instructions:
  • In a 3-quart saucepan, bring water to a boil. Add rice, cover, then let it sit off the heat for 5 minutes.
  • Combine soup, chicken, cumin, chili powder, and red pepper with rice, stirring well. Bring to a vigorous boil over medium-high heat. Cook for approximately 2 minutes, stirring constantly until liquid is absorbed.
  • Evenly distribute the flavorful chicken mixture on each tortilla, adding about 1/2 cup per tortilla. Top with a generous sprinkle of cheese and fresh tomatoes. Roll up the tortillas tightly to seal in the delicious filling.
