Easy chicken skewers with pineapple rice recipe

Elevate your chicken and rice with juicy chicken skewers paired with tasty pineapple rice. Just 5 ingredients for an unforgettable meal.
Ingredients:
  • 2 x 400g pkts Malaysian-style chicken tenderloin skewers or 2 x 375g pkts nut-free satay chicken kebabs
  • 2 x 250g pkts microwavable coconut rice
  • 225g can pineapple pieces in juice, drained, juice reserved
  • 1 red capsicum, seeded, finely chopped
  • 60g baby spinach leaves
Instructions:
  • Preheat a large frying pan over medium heat. Coat the chicken with olive oil spray and cook in batches, turning occasionally, until fully cooked, about 13 minutes.
  • Heat the rice according to package instructions. Fluff the rice with a fork in a bowl. Chop the pineapple into small pieces and mix it with the rice, capsicum, and 2 tablespoons of reserved pineapple juice. Season to taste and gently stir to combine.
  • Spoon the rice mixture into serving bowls and generously layer with the chicken and spinach.
