Grilled chicken skewers with sweet pineapple chunks.
Ingredients:
  • 500g Australian Chicken Tenderloins
  • 1/3 cup (80ml) lemon and herb peri peri marinade
  • 120g pkt 4 Leaf Salad
  • 1/2 pineapple, peeled, cored, thinly sliced
  • 1 shallot, thinly sliced
  • 125.00 ml coriander leaves
  • 42.00 gm lime juice
  • 22.00 gm sweet chilli sauce
  • 18.20 gm olive oil
  • 5.00 gm raw sugar
  • 1 long red chilli, thinly sliced (optional)
  • 35g peanuts
Instructions:
  • Preheat a barbecue grill or chargrill to medium-high heat. Mix the chicken with peri peri marinade in a bowl. Skewer the chicken mixture onto soaked bamboo skewers. Grill for 6 minutes on each side or until fully cooked. Plate and serve.
  • Combine the salad leaves, pineapple, shallot, and coriander in a large bowl. In a screw-top jar, shake together lime juice, sweet chili sauce, oil, and sugar until sugar dissolves.
  • Spread the pineapple mixture elegantly on a serving platter. Layer with the chicken and drizzle with zesty lime dressing. Optionally add a hint of spice with chili, and finish off with a sprinkle of peanuts.
