Chicken fajita skewers recipe

Delicious Mexican chicken skewers served with tortillas, salsa, sour cream, and spicy chilli.
Ingredients:
  • 5.00 gm ground cumin
  • 2.50 gm smoked paprika
  • 1/2 tsp Mexican chilli powder
  • 2.40 gm garlic salt
  • 36.80 gm vegetable oil
  • 600g chicken breast fillets, cut into 3cm pieces
  • 1 large green capsicum, cut into 3cm pieces
  • 1 large red onion, cut into thin wedges
  • 8 mini flour tortillas
  • 125.00 ml medium tomato salsa
  • 77.55 gm sour cream
  • 125.00 ml fresh coriander leaves
  • 2 fresh jalapeno chillies, sliced
Instructions:
  • In a large bowl, mix together the spices, garlic salt, and oil. Add the chicken and toss until well coated. Refrigerate for 30 minutes.
  • Skewer chicken, capsicum, and onion in an alternating pattern on 8 small metal skewers.
  • Preheat a well-greased barbecue grill over medium-high heat. Grill skewers for 6 to 8 minutes, turning occasionally until fully cooked. Place on a plate and let rest for 5 minutes. In the meantime, warm tortillas on the hotplate for 30 seconds per side until slightly charred. Enjoy!
  • Lay tortillas on plates. Arrange skewers, salsa, sour cream, cilantro, and chili on top. Enjoy!
