Cozy chicken and dumplings: simple, crowd-pleasing comfort food for chilly nights.
Ingredients:
  • 2 tablespoons olive oil, or more as needed
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, finely chopped
  • 0.5 stick butter
  • 2 teaspoons salt, or to taste
  • 2 teaspoons ground black pepper, or to taste
  • 4 medium Yukon Gold potatoes, cubed
  • 1 quart water
  • 1 (10.5 ounce) can cream of chicken soup
  • 0.25 cup lemon juice, or to taste
  • 3 cubes chicken bouillon
  • 1.5 tablespoons poultry seasoning
  • 1 teaspoon ground cayenne pepper
  • 1 bay leaf
  • 1.5 pounds cooked chicken breast, chopped
  • 1 (16.3 ounce) can refrigerated biscuit dough (such as Pillsbury Grands!®)
Instructions:
  • In a large stockpot over medium-high heat, heat olive oil until it shimmers. Add celery, carrots, onion, and bell pepper. Sauté until vegetables start to soften, about 5 to 8 minutes, stirring occasionally with a wooden spoon.
  • Sauté garlic until fragrant, approximately 1 minute. Mix in butter until fully melted and enveloping the veggies, about 2 to 3 minutes. Season with salt and pepper. Toss in potatoes and flour, stirring until a creamy texture starts to form, for 3 to 4 minutes. Incorporate water, cream of chicken soup, lemon juice, chicken bouillon, poultry seasoning, cayenne pepper, and bay leaf. Bring to a boil, then simmer covered on medium-low heat until potatoes are tender, around 15 minutes.
  • Place the chicken in the pot and simmer the soup uncovered until the broth reduces and thickens, which should take approximately 10 minutes.
  • Open up the biscuits and cut each piece of dough in half. Place the halves on top of the soup. Lower the heat, cover the pot, and simmer for 8 minutes.
  • Uncover the pot and flip each biscuit. Cover and simmer for an additional 8 minutes. Serve in bowls with biscuits at the bottom.
