Effortless slow cooker chicken and dumplings made with tender biscuit dough for the ultimate comfort dish.
Ingredients:
  • 3 carrots, chopped
  • 0.25 cup water, or as needed
  • 1 teaspoon poultry seasoning
  • 4 skinless, boneless chicken breast halves
  • 1 (10.75 ounce) can low-sodium chicken broth, divided
  • 1 large onion, finely diced
  • 4 stalks celery, chopped
  • 2 tablespoons butter
  • 1 (10.75 ounce) can reduced-fat condensed cream of celery soup (such as Campbell's®)
  • 1 (10.75 ounce) can reduced-fat condensed cream of chicken soup (such as Campbell's® Healthy Request)
  • 0.5 teaspoon dried rosemary
  • 1 (10 ounce) package refrigerated biscuit dough, torn into pieces
Instructions:
  • Combine water, poultry seasoning, salt, and black pepper in a bowl, then generously coat the chicken with the mixture.
  • In a slow cooker, start by gently pouring half of the chicken broth. Add the seasoned chicken, layer with onion, carrots, and celery. Dot butter over the vegetables, then pour in both condensed soups and the rest of the broth. Finish by sprinkling rosemary on top before cooking.
  • Cook the dish on High for 3 1/2 to 4 1/2 hours until the chicken is tender. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker, add the biscuit dough pieces, and cook on High for 1 1/2 hours.
