Easy chicken noodle soup

Soul-warming chicken soup ready in just 35 minutes!
Ingredients:
  • 1.5 litres chicken style liquid stock
  • 2 small carrots, thickly sliced
  • 2 dried bay leaves
  • 3 sprigs fresh thyme
  • 2 x 200g chicken breast fillets
  • 200g pappardelle pasta, broken into large pieces
  • 2 celery stalks, trimmed, thickly sliced
  • Extra 2 tsp fresh thyme leaves, to serve
Instructions:
  • In a large saucepan over high heat, bring the stock, carrot, bay leaves, and thyme to a boil with a lid on. Add the chicken, reduce the heat to medium, and cook covered for 10 minutes until the chicken is just cooked through. Transfer the chicken to a plate and set aside.
  • Add the pasta to the flavorful stock and bring it back to a boil. Let it simmer, partially covered, for about 10 minutes or until the pasta reaches the perfect tender texture.
  • Shred the chicken into large pieces, then add it to the soup along with the celery. Cook for 5 to 6 minutes or until the celery is tender and the chicken is heated through. Remove the bay leaves and thyme sprigs before serving the soup sprinkled with thyme leaves.
