Delight picky eaters with zesty and effortless chicken piccata.
Ingredients:
  • 2 large skinless, boneless chicken breasts
  • 1 cup all-purpose flour
  • 0.5 stick butter
  • salt and ground black pepper to taste
  • 0.5 cup white wine
  • 3 medium lemons, juiced
  • 2 tablespoons drained capers
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Cut chicken breasts into 4 pieces and pound them to 1/4-inch thin between plastic wrap. Coat each piece with flour on both sides.
  • In a large skillet over medium heat, melt butter. Add chicken and season the tops with salt and pepper. Once nicely browned, after about 4 minutes, flip the chicken and season again. Cook until the second side is browned, about 4 more minutes. Transfer the chicken breasts to a plate, keeping the skillet drippings for later use.
  • Pour in the wine and lemon juice into the skillet, stirring to deglaze and infuse flavors. Simmer until the sauce thickens, around 5 minutes. Stir in the capers, then generously drizzle the flavorful sauce over the chicken breasts on the plate. Garnish with fresh parsley before serving.
