Japanese grilled chicken skewers basted in a delicious sweet and salty sake, soy sauce, mirin, and sugar glaze.
Ingredients:
  • 10 wooden skewers
  • 4 skinless, boneless chicken thighs, cut into 1-inch cubes
  • 4 scallions, sliced into 1-inch pieces
  • 0.5 cup sake
  • 0.5 cup soy sauce
  • 3 tablespoons mirin
  • 2 tablespoons white sugar
  • 1 teaspoon vegetable oil, or to taste
Instructions:
  • Submerge 10 wooden skewers in chilled water and let sit for 15 minutes.
  • Skewer chicken pieces with infused skewers, layering with scallions for a flavorful twist.
  • In a small saucepan, bring sake, soy sauce, mirin, and sugar to a boil. Simmer over low heat for 5 minutes. Set aside half of the sauce for dipping.
  • Preheat a grill pan over high heat and lightly brush with vegetable oil. Skewer the chicken and grill until cooked through, basting often with half of the sauce, about 7 to 10 minutes per side.
