Easy and nutritious homemade Japanese classic.
Ingredients:
  • 60ml sake
  • 60ml soy sauce
  • 40.00 ml mirin (rice wine)
  • 40.00 gm caster sugar
  • 6 chicken thigh fillets, cut into 2cm pieces
  • Ground white pepper, to season
  • 2 green onions, trimmed, cut into 2cm pieces
  • 6 fresh shiitake mushrooms, halved
  • 9.20 gm vegetable oil
  • 1 green onion, extra, thinly sliced diagonally
Instructions:
  • In a medium saucepan over medium heat, blend sake, soy sauce, mirin, and sugar together. Let the mixture simmer until it slightly thickens, about 2-3 minutes, stirring occasionally. Remove from heat and allow it to cool.
  • In a bowl, mix the chicken with half of the sauce and season with ground white pepper. Refrigerate for 30 minutes.
  • Skewer the chicken, green onion, and mushrooms in an alternating pattern. Heat oil in a large frying pan over medium heat, then cook skewers for 6 minutes or until done.
  • Place the dish on a platter and generously sprinkle with additional green onions. Serve promptly with the extra sauce on the side.
