Savory sesame soy stir-fried ramen noodles with customizable veggies and meats.
Ingredients:
  • 2 (3 ounce) packages soy sauce-flavored ramen noodles with seasoning packets
  • 2 tablespoons vegetable oil, divided
  • 3 large eggs, beaten
  • 2 teaspoons vegetable oil, divided
  • 4 green onions, thinly sliced
  • 1 small carrot, peeled and grated
  • 0.5 cup green peas
  • 0.25 cup red bell pepper, minced
  • 2 tablespoons sesame oil
  • 1 teaspoon sesame oil, or to taste
  • 1 teaspoon soy sauce, or to taste
Instructions:
  • Boil a pot of water. Add ramen noodles and cook until softened, about 3 minutes. Drain noodles, reserving seasoning packets, and set aside.
  • In a small skillet, heat 1 tablespoon of vegetable oil until shimmering. Add beaten eggs and stir gently until they are fluffy and set. Transfer to a plate and set aside.
  • In a large skillet over medium heat, gently sauté green onions in 1 teaspoon of vegetable oil until softened, about 2-3 minutes. Transfer the onions to a plate and set aside.
  • In the same skillet, heat the remaining 1 teaspoon of vegetable oil over medium heat. Sauté carrots, peas, and bell pepper individually until tender, then transfer each to the plate with the green onions.
  • In a large skillet or wok over medium heat, combine 2 tablespoons of sesame oil with 1 tablespoon of vegetable oil. Fry the cooked noodles in the hot oil until golden, about 3 to 5 minutes, tossing frequently. Season to taste with sesame oil, soy sauce, and reserved ramen seasoning packets; coat the noodles by tossing. Add the cooked vegetables and continue tossing until heated through, approximately 5 more minutes.
