Delicious hoisin pork fillet with nutrient-rich Chinese greens.
Ingredients:
  • 450g pork tenderloin
  • 32.40 gm hoisin sauce
  • 250g dried thin egg noodles
  • 18.20 gm peanut oil
  • 4 garlic cloves, thinly sliced
  • 2cm ginger, cut into thin matchsticks
  • 1 bunch broccolini, trimmed, halved
  • 8 spring onions, trimmed, cut into 6cm lengths
  • 200g sugar snap peas, trimmed
  • 1 bunch choy sum, trimmed, halved
  • 21.00 gm dark soy sauce
  • 1 tsp sesame oil
  • 12.00 gm toasted sesame seeds
Instructions:
  • Preheat the oven to 200°C. Line a roasting pan with baking paper. Brush the pork with hoisin sauce, season with salt and pepper, then place in the roasting pan. Bake for 18 minutes until golden brown and fully cooked. Let it rest covered with foil while you finish preparing the dish.
  • Prepare noodles by cooking them in a pot of boiling water following the package directions. Once cooked, drain and set aside.
  • In a wok or large frypan over medium heat, heat peanut oil. Quickly stir-fry garlic and ginger for 10 seconds until fragrant. Increase heat to high, add broccolini, spring onion, and 1 tablespoon cold water, stir-fry for 2 minutes. Toss in sugar snaps and choy sum, cook for an additional 1-2 minutes until vegetables are tender but crisp. Finish by adding soy sauce and sesame oil, toss to combine.
  • Slice the tender pork and elegantly plate it alongside a colorful array of noodles and fresh vegetables. Finish with a generous sprinkle of aromatic sesame seeds and a light drizzle of the delicious pan juices.
