Hoisin pork

Ingredients:
  • 250 g self-raising flour
  • 1 x 500 g piece of higher-welfare pork fillet
  • olive oil
  • 1 cucumber
  • 4 spring onions
  • 200 g radishes
  • 1 round lettuce
  • 30 g wasabi peas
  • 4 tablespoons hoisin sauce
Instructions:
  • In a large bowl, mix flour with a pinch of sea salt. Add 150ml water and knead lightly on a floured surface for 2 minutes. Cover the dough and let it rest. Trim pork, cut into two pieces, and season with black pepper. Cook in a non-stick pan with olive oil for 15 minutes, turning regularly. Scrape and slice cucumber, slice spring onions and radishes, and separate the lettuce into cups. Crush the wasabi peas. Transfer pork to a plate and spoon hoisin sauce over it. Steam dough in the same pan for 5 minutes. Serve everything together at the table.
