Ingredients:
  • 2 garlic cloves, crushed
  • 67.50 gm hoisin sauce
  • 40.00 ml Chinese cooking wine (see note)
  • 21.00 gm soy sauce
  • 8.00 gm brown sugar
  • 1 tsp Chinese five-spice
  • 500g pork fillets, thinly sliced
  • 18.20 gm peanut oil
  • 1 bunch broccolini, trimmed, halved
  • 4 green onions, cut into 3cm lengths
  • 1 medium red capsicum, thinly sliced
  • 100g cup mushrooms, sliced
  • 440g packet shelf-stable thin hokkien noodles
Instructions:
  • Mix together garlic, hoisin sauce, wine, soy sauce, sugar, and five spice in a glass or ceramic bowl. Add the pork and coat it well. Cover and refrigerate for 30 minutes if possible. Drain the pork and set aside the marinade for later use.
  • Heat a wok over medium-high heat, add half of the oil, swirl to coat, then stir-fry pork in batches for 2 to 3 minutes until browned. Transfer to a bowl.
  • Heat the rest of the oil in the wok until it shimmers. Add broccolini, onion, capsicum, and mushrooms, and stir-fry for 2 to 3 minutes until the broccolini is vibrant green and tender. Put the pork and its juices back into the wok, then add the marinade and noodles. Continue to stir-fry for 1 to 2 minutes until the marinade boils. Serve hot.
