Indulge in succulent cola BBQ pork ribs.
Ingredients:
  • 4 small (1.3kg total) racks American-style pork ribs
  • 375.00 ml cola
  • 2.40 gm onion salt
  • 2.50 gm ground cumin
  • 1 tsp cracked black pepper
  • 40.00 ml Sriracha chilli sauce
  • 70.63 gm smoky barbecue sauce
  • 1 red onion, thickly sliced into rings
  • 500g small chat potatoes
  • 2 corn cobs, husks and silk removed, cut into 2cm thick rounds
  • Chopped fresh chives, to serve
Instructions:
  • In a large glass or ceramic dish, lay down the ribs. Drizzle 3/4 cup of cola over them, ensuring they are well coated. Cover and chill in the fridge for 30 minutes, flipping the ribs halfway through.
  • Preheat the oven to 150C (130C fan-forced) and line a large baking tray with sides with baking paper. Mix onion salt, cumin, pepper, Sriracha, and barbecue sauce together in a medium jug.
  • Place the marinated ribs on the prepared tray. Pour in 1/2 cup of water. Drizzle the Sriracha mixture generously over the ribs to create a thick glaze. Bake for 1 hour and 30 minutes, basting the ribs with tray juices halfway through (avoid brushing to prevent the coating from coming off).
  • Pour the rest of the cola into the tray. Place onion, potatoes, and corn around the ribs. Bake for another 1 hour and 30 minutes, brushing ribs and flipping vegetables every half an hour, until everything is tender. Sprinkle with chives before serving.
