Spicy Creamy Corn Dip: Quick prep, perfect for potlucks. Serve with tortilla chips for a crowd-pleasing appetizer.
Ingredients:
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 8 oz grated sharp Cheddar cheese
  • 1/4 cup from 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 tablespoon ground cumin
  • 1/4 teaspoon chili powder
  • 1 teaspoon garlic salt
  • Freshly ground black pepper, to taste
  • 4 cups canned whole kernel corn, drained
  • 4 or 5 slices bacon, cooked and diced
  • 1/4 cup chopped fresh cilantro
  • Food Should Taste Good™ multigrain tortilla chips, as desired
Instructions:
  • In a large bowl or electric mixer, combine sour cream, mayonnaise, cheese, chiles, and spices. Beat on medium speed until thoroughly blended.
  • Combine the corn, bacon, and cilantro, stirring until thoroughly mixed.
  • Chill in the refrigerator for at least 1 hour, but not more than 24 hours. Serve alongside chips.
