Easy falafel tray bake recipe

Effortless dinner: just toss ingredients on a tray and bake for a delicious meal in no time!
Ingredients:
  • 1 bunch baby carrots, trimmed, halved
  • 1 red onion, cut into wedges
  • 2 mixed capsicums, deseeded, thickly sliced
  • 200g baby truss tomatoes
  • 20.00 ml dukkah
  • 390g packet falafel
  • 125.00 ml fresh mint leaves
  • 90g (1/3 cup) Greek style yoghurt
  • 15.90 gm fresh lemon juice
  • 12.00 gm hulled tahini
Instructions:
  • Preheat your oven to 210C/190C fan forced. Line a large baking tray with baking paper and evenly spread out carrots, onion, and capsicum. Drizzle with oil, season, and roast for 20 minutes. Then, add the tomatoes and continue roasting for another 15 minutes until vegetables are golden and tender.
  • Mix together the yogurt, juice, and tahini in a small bowl. Season to taste.
  • Gently coat the vegetables with flavorful dukkah, add the crispy falafel on top, and bake for an additional 8-10 minutes until heated. Finish with a sprinkle of fresh mint leaves and serve alongside creamy tahini yogurt.
