Whip up a delicious feta tomato pasta with short pasta, cherry tomatoes, feta cheese, and basil for a quick and flavorful meal.
Ingredients:
  • 1 (12 ounce) package penne pasta
  • 0.33333334326744 cup extra-virgin olive oil
  • 16 ounces cherry tomatoes, halved
  • salt and freshly ground black pepper to taste
  • 2 cups crumbled feta cheese
  • 3 tablespoons chopped fresh basil
Instructions:
  • Bring a pot of salted water to a vigorous boil. Cook penne until al dente, about 11 minutes, stirring occasionally.
  • In a skillet over medium-high heat, gently cook tomatoes and salt in olive oil until soft and juicy, stirring occasionally, for 5 to 10 minutes.
  • After cooking, the pasta is drained and promptly mixed with the tomatoes in the pan. Lower the heat and toss gently. Mix in feta cheese and basil, ensuring they are well incorporated. Season with salt and pepper to taste. Serve promptly.
