Refreshing chilled gazpacho made with fresh vegetables and herbs blended into a flavorful tomato base.
Ingredients:
  • 4 cups tomato juice
  • 2 cups chopped tomatoes
  • 1 onion, minced
  • 1 green bell pepper, minced
  • 1 cucumber, chopped
  • 2 green onions, chopped
  • 0.25 cup chopped fresh parsley
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried tarragon
  • 1 teaspoon dried basil
  • 1 teaspoon white sugar
  • salt and pepper to taste
Instructions:
  • In a blender or food processor, blend together tomato juice, tomatoes, onion, bell pepper, cucumber, green onions, parsley, lemon juice, red wine vinegar, garlic, tarragon, basil, sugar, salt, and pepper until smooth with a slightly chunky texture.
  • Transfer the mixture to a stylish serving bowl, cover it, and let it chill in the refrigerator for a minimum of 2 hours before serving.
