Easy Greek Biscuit Bake

Elevate your dinner with a veggie-packed twist!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 teaspoon Greek seasoning
  • 2 1/2 cups Original Bisquick™ mix
  • 1 1/2 cups shredded mozzarella cheese (6 oz)
  • 1 1/4 cups chopped English (hothouse) cucumber
  • 1 1/4 cups chopped tomatoes
  • 1/4 cup Italian dressing
  • 1/2 cup crumbled feta cheese (2 oz)
  • 2 tablespoons chopped fresh parsley
  • Plain Greek yogurt, if desired
Instructions:
  • Preheat oven to 400°F. Grease a 13x9-inch (3-quart) glass baking dish. Brown beef in a 10-inch skillet over medium-high heat for 5 to 7 minutes until cooked through; season with Greek seasoning.
  • In a medium bowl, combine Bisquick™ mix and milk until a soft dough forms. Spread the dough in a baking dish and top with the beef mixture.
  • Bake until golden brown, about 14 to 16 minutes. Sprinkle with mozzarella cheese and bake for an additional 2 to 3 minutes, until the cheese is melted.
  • Combine cucumber, tomatoes, and dressing, stirring gently.
  • Spread the cucumber mixture evenly on top of the mozzarella cheese. Sprinkle with feta cheese, chopped fresh parsley, and serve with a dollop of yogurt.
