Greek almond biscuits

Delicious almond biscuits, perfect for Easter, Christmas, or any time of year.
Ingredients:
  • 250g unsalted butter, at room temperature
  • 80g icing sugar mixture
  • 20.00 ml brandy
  • 4.40 gm vanilla essence
  • 625.00 ml plain flour
  • 85g almond
Instructions:
  • Beat butter, icing sugar mixture, brandy, and vanilla essence together with an electric mixer until light and creamy.
  • Mix the plain flour and almonds gently until combined. Let the mixture chill in the refrigerator for 15 minutes.
  • Preheat the oven to 160°C. Shape 2 tablespoons of the mixture into a crescent shape and place on a tray. Repeat with the remaining dough. Bake for 20 minutes until crisp. Allow to cool slightly, then dust the biscuits with extra icing sugar.
