Delicious grilled corn salad, a must-have for summer fiestas and Mexican cuisine.
Ingredients:
  • 6 ears corn
  • 5 medium plum tomatoes, seeded and chopped
  • 0.5 medium red onion, chopped
  • 0.5 medium red bell pepper, chopped
  • 2 medium green onions, sliced
  • 2 tablespoons chopped fresh cilantro
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 0.5 teaspoon cayenne pepper
  • 0.25 teaspoon ground black pepper
Instructions:
  • Heat up the outdoor grill to medium heat and brush the grate lightly with oil.
  • Grill corn on the covered grill until golden brown in spots, turning occasionally, for 10 to 12 minutes. Allow to cool slightly, then remove kernels from cobs. Combine kernels in a large bowl with tomatoes, onion, bell pepper, green onions, and cilantro, mix thoroughly.
  • Combine oil, lemon juice, sugar, cayenne, salt, and pepper in a small bowl, whisking until smooth. Fold the dressing into the vegetables until evenly coated. Refrigerate until serving.
