Impress guests this Easter with easy-to-make stovetop herbed lamb chops that serve a crowd.
Ingredients:
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon garlic powder
  • 2 teaspoons ground black pepper
  • 12 lamb chops
  • 0.5 cup olive oil
  • 1 medium onion, chopped
  • leaves from 1 celery stalk, chopped
  • 2 tablespoons salt
  • 1 cup water, or as needed
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Mix together the basil, rosemary, oregano, garlic powder, and pepper in a bowl. Use half of the seasoning mixture to season one side of the lamb chops.
  • In a large, deep frying pan, heat olive oil over medium-high heat.
  • - Place the seasoned side of each chop down in the heated pan and season the other side with the remaining spice mix. Brown both sides for 3 to 5 minutes. Reduce the heat to medium, add onions, and cook until they sweat and turn translucent, about 5 minutes.
  • Place a handful of celery leaves and a pinch of salt into the pot along with enough water to barely cover the chops. Allow it to simmer gently over medium heat until the liquid has reduced, for about 20 to 30 minutes. Test the doneness by inserting an instant-read thermometer into the center of a chop; it should read at least 140 degrees F (60 degrees C).
  • Present the dish on a platter, drizzling the remaining reduction as a flavorful sauce. Garnish with a sprinkling of fresh parsley.
