A zesty, Chinese-inspired lemon chicken dish perfect with fried rice or veggies.
Ingredients:
  • 1 cup soy sauce
  • 1 large egg
  • 0.25 cup lemon juice
  • 2 tablespoons rice vinegar
  • 2 teaspoons white sugar
  • 1 teaspoon Chinese hot prepared mustard
  • 4 skinless, boneless chicken breasts, cut into small chunks, or more to taste
  • 0.5 cup cornstarch
  • 2 tablespoons canola oil
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
Instructions:
  • In a medium bowl, combine soy sauce, egg, lemon juice, rice vinegar, sugar, and hot mustard, whisking together until well blended. Add chicken, cover with plastic wrap, and refrigerate for at least 1 hour to allow flavors to develop.
  • Transfer the marinated chicken to a large mixing bowl and generously coat it with 1/2 cup of cornstarch. Dispose of the remaining marinade.
  • In a large skillet over medium heat, brown chicken in batches until cooked through, about 5 minutes per batch. Drain on paper towels.
  • In a saucepan, combine chicken broth, lemon juice, honey, and cornstarch. Bring to a boil, then simmer and stir until the sauce is glossy and thickened, about 10 minutes. Pour over cooked chicken before serving.
