Easy homemade flatbread recipe great for Mediterranean summer meals. Perfect for outdoor dining.
Ingredients:
  • 450g strong (baker's) flour (see note)
  • 7g sachet dried yeast
  • 2.50 gm caster sugar
  • 18.20 gm extra virgin olive oil, plus extra to serve
  • 2 tsp zaatar, plus extra to serve (see note)
Instructions:
  • Preheat your oven to a toasty 200°C and give 2 baking trays a gentle oil massage.
  • Combine sifted flour, yeast, sugar, oil, zaatar, 1 teaspoon salt, and 1 cup (250ml) warm water in a bowl. Knead mixture with hands for 5 minutes until smooth and elastic. Divide dough into 4 balls, roll out into 36cm-long ovals on a floured board. Place on baking trays, prick with a fork, bake for 10 minutes until golden and cooked through.
  • For serving, generously brush warm flatbreads with oil and sprinkle with extra zaatar.
