Easy Homemade Hot Pepper Jelly

Quick and tasty appetizer recipe from a friend. No chopping hot peppers, served over cream cheese with crackers.
Ingredients:
  • 8 green bell peppers, seeded and chopped
  • 8 red, yellow or orange bell peppers, seeded and chopped
  • 1.5 cups vinegar
  • 7 cups white sugar
  • 2 tablespoons crushed red pepper flakes
  • 4 (2 ounce) packages dry pectin
Instructions:
  • Process the red and green peppers in a food processor until finely chopped. Next, strain them thoroughly to remove excess moisture, as this step is crucial for optimal results.
  • Sterilize your jars by boiling or using the dishwasher while the peppers are draining. Keep them hot.
  • In a large pot, mix together the peppers, vinegar, white sugar, red pepper flakes, and pectin. Bring to a vigorous boil over high heat, stirring continuously. Let it boil for 1 minute.
  • Pour the mixture into hot sterile jars, leaving 1/2 inch of space at the top. Seal with new lids and rings. Process in a boiling water bath for 15 minutes, ensuring the jars are fully submerged. Allow to cool; the jelly will be slightly loose. If a jar isn't full, refrigerate and use within a week or two.
