Try making do-ahead icebox cookies for an easy and convenient treat. Simply make the dough, chill it, then slice and bake when ready.
Ingredients:
  • 1 cup butter or margarine, softened
  • 1 1/2 teaspoons vanilla
  • 2 eggs
  • 3 cups Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • Food color (any color)
Instructions:
  • In a large bowl, whisk together sugar, butter, vanilla, and eggs until smooth using an electric mixer or a spoon. Add flour, salt, and baking soda and mix until combined. Split the dough in half. Mix in 1/2 teaspoon of food color into one half, or mix in 1/2 teaspoon of different food colors into each half. Cover both halves and chill in the refrigerator for 1 hour.
  • On a gently floured surface, mold each half of the dough into 2 strips measuring 9x2 1/2 inches each. Arrange the strips in alternating colors, press them together, and then refrigerate for approximately 2 hours until they are solid.
  • Preheat oven to 400°F. Slice the dough into 1/8-inch slices. Arrange slices 1 inch apart on an ungreased cookie sheet. Bake for 8 to 10 minutes until edges turn golden brown. Transfer to a cooling rack right away to cool.
