Melt & mix coconut ice

Indulge in childhood memories with a nostalgic batch of coconut ice.
Ingredients:
  • 830g (5 1/2 cups) pure icing sugar
  • 500g desiccated coconut
  • 250g copha, cubed
  • 1 100g pkt (about 20) white marshmallows, chopped
  • 2 tsp rose water essence (optional)
  • 4 egg whites, at room temperature
  • Few drops of cochineal
Instructions:
  • Prepare a 20cm square cake pan with non-stick baking paper. Sift icing sugar into a large heatproof bowl, then mix in the coconut until well combined.
  • Put the copha in a 1-liter (4-cup) heatproof, microwave-safe jug. Microwave on Medium for 4 minutes until almost melted. Stir until completely melted. Add marshmallows and microwave on Medium for 1 minute until melted (marshmallows will float on top). Stir in rose water essence, if desired.
  • Combine the warm copha mixture with icing sugar and coconut. Mix in the egg whites until fully incorporated.
  • Divide the mixture in half, placing one portion into a different bowl. Slowly incorporate cochineal drops into one bowl, mixing well until achieving the desired color.
  • Spread half of the white mixture evenly in the pan and press it firmly with your fingertips. Layer half of the pink mixture on top and press down. Repeat with the remaining mixtures. Chill in the fridge for 4 hours or overnight. Cut into 2cm squares before serving.
