Delicious pumpkin-coconut loaves are moist and rich, blending a unique flavor duo of pumpkin and coconut pudding mix.
Ingredients:
  • 2 cups white sugar
  • 2 (3.5 ounce) packages instant coconut cream pudding mix
  • 1 teaspoon baking soda
  • 1.25 cups vegetable oil
  • 5 eggs
  • 2 cups canned pumpkin puree
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and gently grease two 9x5 inch loaf pans.
  • Combine flour, sugar, pudding mix, baking soda, salt, and cinnamon in a large bowl. Add oil, eggs, and pumpkin, stirring until just blended. Fold the flour mixture into the egg mixture, then pour the batter into prepared pans.
  • Bake in a preheated oven until a toothpick inserted into the center of the loaf comes out clean, about 1 hour. Allow it to rest for 15 minutes, then remove from the pans and cool on a wire rack.
