Deliciously light and moist blueberry cake, perfect for summer picnics. Bursting with juicy blueberry flavor.
Ingredients:
  • 0.5 cup butter
  • 0.75 cup white sugar, divided
  • 2 egg yolks
  • 1.5 cups all-purpose flour
  • 0.33333334326744 cup milk
  • 1.5 cups fresh blueberries
  • 2 egg whites
Instructions:
  • Collect all your ingredients for this delicious recipe and preheat your oven to 350 degrees F (175 degrees C). Prepare your 8-inch pan by generously greasing and flouring it.
  • Combine butter and 1/2 cup sugar in a large bowl and beat with an electric mixer until fluffy; mix in vanilla and salt. Add egg yolks and beat until creamy.
  • Mix 1 1/2 cups of flour and baking powder in a bowl, then gradually add to the creamed mixture, alternating with milk.
  • Coat blueberries in 1 tablespoon of flour before gently folding them into the batter.
  • In a separate bowl, whip egg whites until soft peaks form. Gradually add the remaining 1/4 cup of sugar, beating until stiff peaks form. Gently fold the fluffy egg whites into the cake batter.
  • Transfer the batter into the pan, then generously sprinkle the remaining sugar over the top.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 50 minutes.
