Simple lemon shrimp penne pasta with bell pepper in a bright, flavorful sauce. Ideal for any occasion.
Ingredients:
  • 6 ounces penne pasta
  • 2 tablespoons butter
  • 1 cup red bell pepper strips
  • 1 teaspoon minced fresh garlic
  • 0.5 pound uncooked medium shrimp, peeled and deveined
  • 3 tablespoons lemon juice
  • 0.5 teaspoon lemon zest, or more to taste
  • 2 tablespoons Parmesan cheese, or to taste
  • 1 tablespoon chopped fresh parsley, or to taste
Instructions:
  • Boil a pot of lightly salted water. Add penne and cook until al dente, about 11 minutes. Drain and set aside.
  • In a 10-inch skillet over medium heat, melt butter until sizzling. Toss in red pepper strips and garlic; sauté until peppers are tender-crisp, about 2-3 minutes. Add shrimp and lemon juice, stir non-stop until shrimp are vibrant pink and cooked through, 4-6 minutes.
  • Toss cooked pasta with fresh lemon zest. Serve with a sprinkle of Parmesan cheese and chopped parsley on top.
