Indulge in a refreshing lemonade pie, perfect for a quick and satisfying dessert straight from the freezer.
Ingredients:
  • 1 1/2 cups finely crushed graham crackers (20 squares)
  • 1/3 cup margarine or butter, melted
  • 3 tablespoons sugar
  • 1 quart (4 cups) vanilla ice cream, softened
  • 1 can (6 ounces) frozen lemonade concentrate, thawed
  • Few drops yellow food color, if desired
  • Grated lemon or lime peel, if desired
Instructions:
  • Preheat the oven to 375°F. Combine all Graham Cracker Crust ingredients in a medium bowl. Press the mixture firmly into a 9x1 1/4 inch pie plate. Bake for about 10 minutes until lightly browned. Allow to cool for 30 minutes before proceeding.
  • Combine the ice cream, lemonade concentrate, and food coloring in a large bowl. Transfer the creamy mixture onto the crust in a heaping mound.
  • Chill for 4 hours until firm. Allow to sit at room temperature briefly before slicing. Top with grated lemon peel and keep covered in the freezer.
