Affordable homemade marinated artichoke hearts elevate any salad.
Ingredients:
  • 1 lemon, juiced
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground black pepper, or to taste
  • 1 (14 ounce) can quartered artichoke hearts, drained
Instructions:
  • In a sealed jar, shake together lemon juice, oil, garlic, Italian seasoning, salt, and pepper until the mixture emulsifies.
  • Uncover and toss in artichoke hearts. Seal and shake vigorously until artichoke hearts are fully coated.
  • Enjoy right away, or for a refreshing twist, refrigerate for a minimum of 1 hour before serving.
