Flavorful vegetarian frittata with tender herb-marinated artichokes.
Ingredients:
  • 1 small brown onion, halved, thinly sliced crossways
  • 1 x 170g jar marinated artichoke hearts, drained
  • 6 eggs
  • 1 garlic clove, crushed
  • 40.00 ml fresh continental parsley leaves
Instructions:
  • Preheat grill to medium-high heat. In a 20cm non-stick frying pan, heat oil over medium heat. Sauté onion until golden brown, about 5-6 minutes. Stir in artichokes and cook for an additional 2 minutes until heated through.
  • In a jug, combine eggs, garlic, salt, and pepper, whisking until well combined.
  • Gently pour the beaten eggs over the artichoke mixture. Cook on low heat for 6-7 minutes until the frittata sets on the edges but remains slightly runny in the center. Finish by grilling for 2 minutes until golden and perfectly set. Slide the frittata onto a chopping board.
  • Cut the mouthwatering frittata into 8 delicious wedges. Display them elegantly on a serving platter and generously sprinkle with fresh parsley before serving.
