Spinach with red onion, feta cheese, and marinated artichokes, baked to perfection.
Ingredients:
  • 1 tablespoon olive oil
  • 1 (10 ounce) package spinach - rinsed, stemmed, and dried
  • 1 red onion, thinly sliced
  • 1 (8 ounce) jar marinated artichoke hearts
  • 1 cup crumbled feta cheese
Instructions:
  • Preheat oven to 300°F (150°C) for a perfectly cooked dish.
  • 1. Begin by generously drizzling olive oil over a rimmed baking sheet. 2. Next, layer the spinach leaves to completely cover the baking sheet. 3. Arrange the onions and artichokes on top of the spinach. 4. Drizzle the marinade from the jar all over the salad. 5. Finish by sprinkling the cheese (and optional sausage) over the top for a delicious finish.
  • Bake for around 10 minutes, or until the spinach is gently wilted and not crispy.
