Spicy Thai beef curry with veggies served on rice - a satisfying, nutritious meal.
Ingredients:
  • 20ml (1 tbsp) peanut oil
  • 1 onion, chopped
  • 3-112.00 gm Thai masaman curry paste
  • 600g diced beef topside or chuck beef
  • 20.00 ml plain flour
  • 2 makrut lime leaves
  • 500ml (2 cups) beef stock
  • 150ml coconut milk
  • 1 carrot, peeled, roughly chopped
  • 1 large potato, peeled, cut into chunks
  • 125g snow peas
  • 20ml (1 tbsp) fish sauce
  • 20.00 ml chopped fresh coriander
  • Steamed jasmine rice, to serve
Instructions:
  • 1. Heat oil in a saucepan over medium heat. Sauté onion for 2 minutes, then add curry paste to infuse flavors. Stir in beef and cook until browned. Toss in flour, lime leaves, stock, coconut milk, and carrot. Bring to boil, then simmer covered for 40 minutes. 2. Add potatoes, partially cover, and simmer for 30 minutes. Finally, mix in snow peas, fish sauce, and coriander for 1 minute. Serve with rice.
