Easy beef massaman curry

Kid-friendly Massaman curry, a mild and flavor-packed Thai favorite.
Ingredients:
  • 9.20 gm vegetable oil
  • 1 brown onion, finely chopped
  • 500g extra lean beef mince
  • 56.00 gm massaman curry paste (see notes)
  • 375ml can coconut-flavoured evaporated milk
  • 16.00 gm brown sugar
  • 500.00 ml frozen mixed vegetables (see notes)
  • 62.50 ml fresh coriander leaves
  • Steamed jasmine rice, to serve
Instructions:
  • In a large non-stick frying pan over medium heat, sauté the onion in oil until softened, about 5 minutes.
  • - Brown the mince by cooking it for 5 minutes with a wooden spoon until it's no longer pink. - Stir in the curry paste and cook for 1 minute until it becomes fragrant. - Pour in the evaporated milk and bring to a simmer. - Sprinkle in the sugar and mix well. - Simmer on medium-low heat for about 5 minutes until slightly thickened.
  • Place a generous amount of frozen vegetables into the pot. Allow them to cook with the lid on for 4 to 5 minutes or until the vegetables reach the perfect level of tenderness. Serve the flavorful curry over a bed of rice, and garnish with fresh coriander leaves.
