Indulgent, make-ahead cheesy mashed potato casserole - the ultimate comfort food and ideal for potlucks or as a delightful dinner side. Let's cook!
Ingredients:
  • 2 teaspoons butter
  • 16 medium green onions, sliced (1 cup)
  • 1 medium yellow or orange bell pepper, chopped (1 cup)
  • 4 cups water
  • 1 1/2 cups half-and-half or whole milk
  • 6 tablespoons butter
  • 2 pouches (4.7 oz each) Betty Crocker™ roasted garlic mashed potatoes
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
Instructions:
  • Preheat the oven to 350°F and coat a 2-quart casserole dish with cooking spray. In a 10-inch nonstick skillet over medium-high heat, melt 2 teaspoons of butter. Sauté onions and bell pepper in the butter for 2 to 3 minutes, stirring occasionally. Remove from heat and set aside.
  • In a 3-quart saucepan, bring water, half-and-half, and butter to a boil. Remove from heat, add both pouches of potatoes, stir until moistened, and let sit for about 1 minute until liquid is absorbed. Then, beat with a fork until smooth.
  • Layer 2 cups of potatoes in casserole dish, then add half of the onion mixture and 3/4 cup of cheese. Add another 2 cups of potatoes and spread evenly. Sprinkle the remaining onion mixture. Top with remaining potatoes, spread evenly, and sprinkle the last 3/4 cup of cheese.
  • Bake for around 30 minutes, or until heated through, leaving it uncovered.
