Prep ahead: Creamy mashed potato casserole with sour cream, parsley, and garlic - perfect for holiday entertaining.
Ingredients:
  • 2 tablespoons butter
  • 9 large potatoes, peeled
  • 1 (8 ounce) container sour cream
  • 1 (6 ounce) package cream cheese
  • 1 teaspoon onion salt
  • 0.5 teaspoon garlic powder
  • 1 dash ground black pepper
  • 0.5 cup shredded Cheddar cheese
  • 1 pinch dried parsley flakes, or to taste
  • 1 pinch paprika, or to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously butter a casserole dish.
  • In a large pot, cover the potatoes with salted water and bring to a boil. Simmer over medium-low heat for about 20 minutes until tender.
  • *After draining the potatoes, save the water for mashing if needed. Combine sour cream, cream cheese, onion salt, garlic powder, and pepper; mix until creamy. Transfer mixture to the dish. Top with Cheddar cheese, parsley, and paprika.*
  • Bake without a cover until the cheese is bubbling, which should take around 35 minutes.
