Quick and easy Mexican breakfast bake - layer tortilla chips, enchilada sauce, and cheese, then microwave for a delicious meal.
Ingredients:
  • 1.75 cups enchilada sauce
  • 1 (7-1/2 ounce) bag corn tortilla chips
  • 2 cups sour cream
  • 12 ounces shredded queso asadero (white Mexican cheese)
Instructions:
  • Start by generously coating the bottom of a shallow microwaveable dish with enchilada sauce. Layer tortilla chips on top, then add another layer of sauce and a layer of sour cream. Sprinkle cheese over the top. Repeat layers until all ingredients are used, finishing with a generous sprinkle of cheese on top.
  • Microwave on high for 2 minutes or until the cheese is perfectly melted. Serve hot.
