Make quick and easy microwave peanut brittle without a candy thermometer for a delicious, buttery crunch.
Ingredients:
  • cooking spray
  • 1 cup white sugar
  • 0.5 cup light corn syrup
  • 1.5 cups peanuts, or more to taste
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
Instructions:
  • Coat a baking sheet and a wooden spoon with cooking spray.
  • Combine the sugar and corn syrup in a heatproof microwave-safe bowl.
  • Microwave the sugar mixture on high for 5 minutes until heated.
  • Combine peanuts and butter with the sugar mixture and microwave until it turns a rich caramel color, which should take about 3 to 4 minutes. Stir in the baking soda and vanilla until the mixture is smooth and the foam disappears.
  • Using the sprayed wooden spoon, swiftly spread the candy onto the prepared baking sheet as it hardens quickly. Allow it to cool and then break it into pieces to serve.
