Indulge in a refreshing banana split sundae for a delightful treat.
Ingredients:
  • 200g dark chocolate, chopped
  • 378.75 gm thickened cream
  • 4 small bananas, peeled
  • 1 litre vanilla ice-cream
  • 107.50 gm caster sugar
  • 62.50 ml roughly chopped roasted salted peanuts
Instructions:
  • Prepare the baking tray by lining it with baking paper. Combine sugar and 2 tablespoons of warm water in a saucepan over low heat. Stir continuously for 5 minutes until sugar is dissolved (do not let it boil). Increase heat to medium and bring it to a boil. Let it cook without stirring for 6 to 8 minutes until it turns deep golden. Remove from heat and mix in the peanuts. Gently pour the mixture onto the prepared tray. Let it sit at room temperature for about an hour until it sets. Break it into small pieces to serve.
  • Combine chocolate and half of the cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring each time, until smooth. Let it cool for 20 minutes before using.
  • With an electric mixer, whip the rest of the cream until stiff peaks form. Transfer the whipped cream into a piping bag equipped with a 1cm fluted nozzle.
  • Slice the bananas in half lengthwise using a knife and arrange them in sundae dishes. Add 2 scoops of ice cream and drizzle 2 tablespoons of chocolate sauce over each. Finish by piping a swirl of cream and sprinkling with brittle before serving.
