Indulgent truffle-filled dark chocolate souffle - irresistibly airy and decadent.
Ingredients:
  • 200g dark chocolate, finely chopped
  • 100g Butter, chopped
  • 100g (1/2 cup) caster sugar
  • 50g (1/3 cup) plain flour
  • 4 eggs, separated
  • Pinch of cream of tartar
  • 40.00 gm caster sugar, extra
  • 8 Dark Chocolate Balls
  • Double cream, to serve
  • 100g dark chocolate, finely chopped
  • 60ml (1/4 cup) thickened cream
  • 10g Butter
Instructions:
  • Preheat the oven to 180°C and generously grease four 310ml (1 1/4-cup) ovenproof dishes with butter.
  • In a large microwave-safe glass or ceramic bowl, melt the chocolate and butter together on high power, stirring every minute until smooth. Allow the mixture to cool for 5 minutes.
  • Combine the sugar, flour, and egg yolks with the chocolate mixture, stirring until fully incorporated.
  • Whisk egg whites and cream of tartar with an electric beater until soft peaks form. Gradually add extra sugar and continue whisking until firm peaks form. Gently fold into the chocolate mixture using a large metal spoon until well combined.
  • Spoon the chocolate mixture into the greased dishes. Gently press 2 chocolate balls into the center of each dish. Bake for 30-35 minutes until a skewer inserted into the center comes out with moist crumbs attached.
  • While you wait, create the sauce by combining chocolate, thickened cream, and butter in a microwave-safe jug. Heat on high, stirring every minute, until the mixture is melted and smooth.
  • Drizzle with sauce and top with double cream.
