Broiled orange roughy fillets topped with buttery Parmesan-Dijon spread make a delicious and easy fish dinner.
Ingredients:
  • 4 (4 ounce) fillets orange roughy
  • 0.5 lemon
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup butter, softened
  • 0.25 cup prepared Dijon mustard mayonnaise blend
  • 1 large clove garlic, pressed
  • 0.25 teaspoon salt
  • 0.5 teaspoon paprika, or to taste
Instructions:
  • Preheat the broiler in the oven and position the rack 6 inches from the heat source.
  • Lay fillets on the broiler pan and drizzle with fresh lemon juice.
  • Place in the hot oven and broil for 6 to 8 minutes.
  • Mix Parmesan, butter, Dijionnaise, garlic, and salt in a small bowl. Spread the flavorful mixture on top of the fillets and then sprinkle with paprika for added flavor.
  • Broil until the topping is golden brown and the fish easily flakes with a fork, approximately 3 minutes.
