Easy and foolproof oven-braised chicken thighs that even picky eaters will love.
Ingredients:
  • 2 pounds skin-on bone-in whole chicken legs (drumsticks and thighs)
  • 1 tablespoon canola oil
  • 2 cups boiling water
  • 2 tablespoons garlic powder
  • 1 tablespoon chicken bouillon powder, or more to taste
Instructions:
  • Preheat your oven to 325°F (165°C), then gently pat the chicken dry and generously season it with salt and pepper.
  • In a large skillet, heat oil over medium-high heat until shimmering. Brown chicken skin-side down in batches for about 3 minutes per batch, making sure not to burn it. Flip and cook for 1 more minute. Place the chicken, skin-side up, in a 9x13-inch baking dish.
  • In a small bowl, mix together boiling water, garlic powder, and bouillon. Pour the mixture into the baking dish around the chicken, ensuring it reaches about one-third of the way up the sides without covering the chicken.
  • Bake chicken in the preheated oven, covered, for 60-75 minutes until no longer pink at the bone and juices run clear. If desired, uncover and broil for the last 5 minutes. Ensure internal temperature reaches 165 degrees F (74 degrees C) when measured near the bone.
  • Take the chicken out of the oven and place it on a platter. Allow it to rest for 5 to 10 minutes before serving.
