Easy paella tray bake recipe

Delicious protein-filled paella bake with veggies, prawns, and pepperoni.
Ingredients:
  • 80g sliced pepperoni
  • 1 brown onion, chopped
  • 1 red capsicum, seeded, chopped
  • 250g rice
  • 100g cherry tomatoes, halved
  • 500ml chicken stock
  • 90g pea
  • 20 raw prawns, peeled leaving tails intact, deveined
  • 62.50 ml flat-leaf parsley sprigs
Instructions:
  • Preheat the oven to 200°C. In a large frying pan over medium-high heat, sauté the pepperoni in oil until lightly browned, about 2 minutes. Transfer the pepperoni to a heatproof bowl using a slotted spoon. Add the onion and capsicum to the same pan and cook until the onion softens, about 3 minutes.
  • Evenly spread the rice in a 2cm-deep large roasting pan. Top with pepperoni, onion mixture, and tomato, gently pressing down. Pour the stock over everything.
  • 1. Seal the pan with foil, then bake for 15 minutes. Remove the foil and add peas and prawns on top of the rice. Bake for an additional 10 minutes until the rice is tender, and the prawns are curled and cooked through. Serve with a sprinkle of parsley.
